Swami’s Spiders

I literally stumbled on these spiders that covered the brush on the bluff at Swami’s.  The much larger spiders were beautiful and spindly, but were well camouflaged.  They didn’t photograph well.

Old Recipes from My Notebook

When I cook, I generally don’t follow recipes.  If I enjoy a dish I write down the ingredients in my recipe notebook.  These are some of my older recipes.  I do a lot of holiday cooking.

Spiced Rum Brownies with White Chocolate Chips

3c sugar

2 eggs

1 1/2 shot spiced rum

6 squares unsweetened chocolate

2 sticks butter

1 pkg white chocolate chips

2c flour

1t baking soda

1Tbl. nutmeg

1t cinnamon

2t salt

grease glass baking dish

325 degrees for 30 minutes

 

10lb Ham Shank

score ham

rub with ground cloves, thyme & sage

drizzle cinnamon honey over seasoned ham to glaze

cover with foil

baste with honey

reapply seasoning halfway through baking

bake 1 hr, 50 minutes

 

Cranberry Pumpkin Bread

Mix dry ingredients:

2c white flour

2t baking powder

2t baking soda

cinnamon

nutmeg

allspice (just a little)

2 pinches of ground cloves

<1t salt

Blend wet ingredients:

2c pumpkin

1c sugar

1c brown sugar

3 eggs

juice 1/2 orange

2Tbl. Milk

1t vanilla butter nut extract

2t molasses

1/3c corn oil

6oz package dried cranberries

Combine wet & dry mixtures

Bake at 375 for 30-35 minutes (makes 5 small loaves)

 

Macadamia Rice

Mix together:

1 can light coconut milk

1c sugar

chopped macadamia nuts

1 can crushed pineapple in syrup

chopped dates

Cook separately:

1c white rice

1c wild rice

Add mixture to rice

Simmer down to absorb liquid and tenderize wild rice

160 minute preparation time

Yams

Marinate fresh cranberries, star sliced granny smith apples & walnuts in cran-apple juice, corn syrup, triple sec, gran marnier and vodka (cranberries should swell).

Peel & chop raw yams

Boil yams in cinnamon, honey, allspice, nutmeg and candied orange peel until tender.

Pour over marinating “cocktail”

Sprinkle with brown sugar

Bake

Pistachio Fruit Stuffing for Poultry

Fat Free Herbed Croutons

Halved Pistachios

Chopped dried strawberries

Trader Joe’s Marion Berry Apple Big Chunks Apple Sauce

1c vanilla yogurt

2 eggs beaten

chopped candied ginger
